Let me start off by saying that it takes a miracle to get Kian and Ella to eat as much chicken as they did tonight! We didn't have a ton of ingredients to make anything fancy, so I looked up recipes that included honey and chicken. I knew the kids would eat chicken if there was some honey on it! I found this recipe on allrecipes.com and it was a big hit so I thought I'd share it! Enjoy!
Honey Baked Chicken:
Ingredients
-1 (2-3 pound) whole chicken or 3 chicken breasts
-1/2 teaspoon garlic powder
-2 teaspoons salt
-1/4 teaspoon ground black pepper
-1 egg yolk
-1 1/2 tablespoons honey (we used alfalfa)
-4 tablespoons margarine or butter
Directions
1) Preheat oven to 325 degrees F
2) Rub chicken with garlic powder, salt, and pepper. In a small bowl, beat egg yolk with honey and butter, then brush the mixture over the chicken pieces. Place chicken pieces, skin side down, in a lightly greased baking dish.
3) Bake at 325 degrees F for 45-60 minutes or until chicken is cooked through and the juices are clear. Baste with the remaining butter or margarine. Just before serving, turn chicken over and bake for 10-15 minutes to cook the skin on the other side.
*Depending on how much chicken you decide to use, you may need to bake for a bit longer than 45-60 minutes.
